Spicy Garlic Kale Stir Fry

Spicy Garlic Kale Stir Fry
PREPARATION 5 minutes

SERVINGS Serves 4
Ingredients
· 1 Bunch of Kale, washed, ribs removed and cut into bite-size pieces
· 6 Cloves of Garlic, minced or sliced
· A Good Pinch of Hot Pepper Flakes
· 2 Anchovies Packed in Oil
· About 3 Tbsp of Olive Oil
· Salt and Pepper, to taste
Preparation
1) In a large skillet over medium heat, saute the garlic in the oil until lightly golden and fragrant, add the anchovies and hot pepper flakes and saute them until the anchovies melt. 2) Add the kale, turn the heat down to low, cover and let it cook for a few minutes or until the kale starts to wilt. 3) Give it a good stir, cover it once again, increase the heat to medium and cook the kale for about 6 to 7 minutes or until it has wilted quite a bit but still has a bit of bite. 4) Season with salt and pepper to taste and stir in the lemon zest. Serve right away!

Kale, Ginger Stir-fry with Tahini, ginger Sauce
Kale Recipe Ingredients:
1 bunch KALE
1 piece fresh GINGER about the size of your thumb
1 medium ONION (cut into slices)
½ cup CARROT (thinly cut or string cut)
1 hot PEPPER (finely chopped, optional)
1 Tbsp SESAME OIL
SALT (to taste), preferably Himayalan pink salt
1 Tbsp TAHINI
3-4 Tbsp SOY SAUCE or Coconut Amino’s if you are trying to avoid soy
Divide the ginger into two halves. Finely chop one half to use in the sauce and thinly slice the other half and set aside to cook with the stir fry.
Sauce:
In a small bowl, mix together the tahini and soy sauce until a thin peanut-buttery consistency is achieved. Mix the finely chopped ginger into the sauce and set aside.
Stir Fry:
Wash kale, remove spine, and cut or tear into mouth-manageable pieces. Heat the sesame oil on medium high and sauté onion slices and finely chopped pepper for 1 minute. Add a pinch of salt (not much salt will be needed because of the salt in the soy sauce). Add Ginger slices and cook for another minute. Reduce heat to medium and add the kale and carrots. Mix thoroughly with the onion, pepper, and ginger. Cover and allow to cook for 2 minutes. Turn off heat and add sauce. Toss well and serve hot (and it goes great with rice or cauliflower rice).

1. Heat the oil in a large wok, then add the kale and a couple tbsp water. Season, then stir-fry for 5-8 mins, adding the garlic and chilli for the final 2 mins. When the kale is tender and a vibrant green, remove from the heat and serve.
TIP
For an even lower-fat version, steam the kale for 5 mins. Fry the chilli and garlic in 1 tsp oil and toss through
